Pumpkin Chocolate Chip Muffins

A decadent way to enjoy the delicious combination of pumpkin and chocolate, without the guilt!

Ingredients

  • 2 cups Kodiak Cake Power Cakes Mix
  • 1 cup almond milk
  • 1 egg
  • 1/4 cup brown sugar
  • 1/2 cup baking stevia
  • 1/4 cup melted coconut oil
  • 1 cup pumpkin puree
  • 1 teaspoon cinnamon
  • 1-2 teaspoons pumpkin pie spice to taste
  • 3/4 cup mini chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Line muffin tin and grease liners with cooking spray.

  2. Combine all ingredients except chocolate chips. After ingredients are combined, stir in mini chocolate chips.

  3. Pour batter into greased muffin liners. Bake at 350 for 18-20 minutes until an inserted toothpick comes out clean.
