Pumpkin Spice Energy Bites

These wholesome energy bites are a great source of natural energy for nursing mamas--and everyone else! 

Servings 20 energy bites

Ingredients

Wet Ingredients

  • 1/2 cup pumpkin puree
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 tablespoon pumpkin pie spice
  • 1/4 cup ground flaxseed meal
  • 1/2 cup chopped nuts
  • 1/2 cup mini chocolate chips
  • 1-2 tablespoons Brewer's Yeast (optional-add for nursing moms)

Instructions

  1. Combine peanut butter, pumpkin, honey and maple syrup in a large bowl.

  2. Add vanilla, pumpkin pie spice and Brewer's yeast (if using). Mix well. 

  3. Add oats, flaxseed meal, nuts, chocolate chips and combine.


  4. Place dough in refrigerator for ~one hour to chill.

  5. Roll into 1" balls. Store in fridge or freezer!

Recipe Notes

If dough seems too sticky, add a few more tablespoons of flaxseed meal.
