Healthy Pumpkin Chocolate Chip Muffins
One of my favorite things about fall is getting to eat all things pumpkin flavored! While I definitely indulge in Pumpkin Spice Lattes every once in awhile and never turn down pumpkin pie– it is nice to have a healthier way to enjoy the fall flavor!
These pumpkin chocolate chip muffins are made with Kodiak Cakes Protein Power Cakes mix, which is a staple that we always have in our pantry. We usually use Kodiak Cakes for making pancakes or waffles, but I recently discovered that you can use the mix to make muffins as well. Using the mix is not only convenient, but also adds in some extra protein, which helps keep you full longer!
Here is how to make them:
Pumpkin Chocolate Chip Muffins
A decadent way to enjoy the delicious combination of pumpkin and chocolate, without the guilt!
Ingredients
- 2 cups Kodiak Cake Power Cakes Mix
- 1 cup almond milk
- 1 egg
- 1/4 cup brown sugar
- 1/2 cup baking stevia
- 1/4 cup melted coconut oil
- 1 cup pumpkin puree
- 1 teaspoon cinnamon
- 1-2 teaspoons pumpkin pie spice to taste
- 3/4 cup mini chocolate chips
Instructions

Preheat oven to 350 degrees. Line muffin tin and grease liners with cooking spray.

Combine all ingredients except chocolate chips. After ingredients are combined, stir in mini chocolate chips.

Pour batter into greased muffin liners. Bake at 350 for 18-20 minutes until an inserted toothpick comes out clean.

Thanks for this recipe! My toddlers loved it (used only a pinch of pumpkin pie spice because it’s been too strong for them in other recipes but otherwise followed the recipe exactly). It was moist, tasty and hardy.
